I'm sorry, how are we almost half way thru the year? How is it May, and already Mother's Day? Clearly you won't see any Mother's Day specials from me. That's ok, life happens! And work happens! And boy has it been crazy; I feel like this is the reason I don't know what day it is anymore. I should be happy, people are traveling, having meetings and I'm working overtime. But where does that leave my sanity? Baking has always been the therapy I turned to. Lately though, its been hard trying to find time to update the blog, put out IG posts and start something in the kitchen. Nevermind I started back up on another activity that I haven't done in years.
What I need is one day when I'm not exhausted trying to do everything. To sit down and plan. What to do when, and clearly plan future months for the blog in advance.
So here's to May! Almost half way thru the year, my birthday month, the month from hell at work and I'm still trying to figure out my vacation dates for this summer. I want to stick with my wanting to share something new each month so I'll share one of my favorite snacks. It can be a dessert, a breakfast or just a go to snack. Best of all there's no baking required. In Greece they call it Mosaic, you can also find it online referred to as Chocolate Salami. No worries though there is no meat involved in this dessert, just Chocolate, tea biscuits, and nuts. Make the batter roll it and twist the ends to shape into a log and refrigerate until firm. Then cut into slices and serve! One piece is sure to satisfy a sweets craving. As always, I'm happy to do the baking, or unbaking in this case and you can be the judge!
