Lemon Ricotta Cake


Sometimes you want something sweet, but not so much that you feel a cavity forming! Just enough sweet to enjoy all the flavors in the dessert. Oh me oh my, this is cake is exactly that dessert. So you could categorize this as a cheesecake because of the ricotta, but it is not. When I think of a cheesecake, I think ultimate creamy, but very sweet too. This was a perfect not so sweet, lemony cake. I had originally planned to fold in some blueberries, but decided to just decorate and serve them with a slice.
