I’ve never really been a huge fan of shortbread cookies. They are good, but not so good I crave them. I had a thought the other day however, and about a different way to prepare them so they might be more tasty. Maybe it’s been done before, but I have yet to see it! What better way to infuse a cookie than with actual tea!!! No, I did not Brew it and put it in the dough, I put the actual tea leaves into the dough. Ok, so you should make sure they are fine enough, if not, just process them in a grinder and sift into the dough.

My first trial, blueberrie tea cookies! Earlier this year, I had visited Vancouver and came home with a variety tea box. One of which was Blueberry tea. It smells really good! I haven’t tried it as tea yet, but for this batch of cookies, I was cu the tea bag and poured the contents into the batter. Only to create a delightful tasting cookie!! I just couldn’t stop there, so this morning, I softened some more butter, and took another tea and made more cookies. This time however I am not quite sure the tea as it was a gift and was not labeled, but I think it may have been a hibiscus tea. In any case, the flavor once again came out beautifully. I just want to keep trying new flavors!! If you have any suggestions, please drop me a line.
