Something many bakers will live by is the saying that most things are better with butter, but what that really refers to is the option of butter or margarine in a recipe! I am one for everything is better with butter kind of gal! We are just a couple weeks away from the Great Lent, and when it comes to Fasting for lent however, not having any meat or dairy products can put a dent in one's options when it comes to sweets. The dairy that is, not so much the meat part. For those that are strict and fast each year, I am in awe of you! I did not grow up fasting, but I did try it once for lent. It will definitely test you! I don’t think I’ve ever eaten so much fish/seafood in that small amount of time, as well as trying to be creative with my meals. But while I may not fast in the traditional way, I have often given up something, like no sugar, or no carbs, and even no alcohol. One year I gave up soda, and my boss back then was not too thrilled especially when I began to have momentsof memory loss. Giving it up, going cold turkey, it affected me. Like absentmindedly forgetting things at work; in the end it though, it definitely got me away from all that bad sugar, cleary positive results.
Going back to Lent, for many, as I was saying above, this means a time to abstain from certain foods! For that reason, this month I am highlighting a collectionwonderfulcookies. I
also decided we also needed a break from the syrupy desserts. They’ll be back, but there are so many other Greek sweets to highlight in the meantime. With just two weeks left before the start of lent, boy do I have a treat for you, these cookies are technically vegan, with the exception of honey. (However this can be replaced if necessary.) No eggs, no dairy, no butter, but still flavorful and delicious! Especially with a cup of coffee or tea, even milk and OJ would pair well with these.
So now that life is starting to resume to a new “normal”, everyone is looking forward to traveling, to getting together with friends and family afar. People are starting to have dinner parties, birthday parties or just a gathering at home with friends they haven’t seen in too long. These cookies are a perfect addition to a party or gathering you are hosting, or as a take-a-long and gift it to the host of a gathering. Moreover, they are a PERFECT accompaniment to morning beverage, afternoon snack or before bed treat. A touch of sweetness, but not addictive! And they pack protein in the form of nuts. I guess you could call them healthy! You know, like a sweet potato is healthier than a regular potato, healthy. Ah, you got it right?!
